Baking Fiend
Rob will atest to the fact that I’ve been in a baking mood this last month. Every week, usually Thursday, I bake something new to keep us fed and entertained over the weekend. Why, you may ask? With Rob’s braces came a long list of things he can’t eat, one of which being Dark Chocolate Snickers, his fav candy and one that we always had in the house (nuts + carmel = BAD for braces). So, I decided, completely unrequested, to make something each week for him to enjoy instead.
Last week, it was Best Oatmeal Cookies . I added chocolate chips to it, as per Rob’s request. These were GREAT. Scarey thing was, they got better as they aged! Weird, huh? He took a few to work one morning for a quick breakfast. A couple coworkers talked him out of half a cookie each and they raved over them. One guy said, “You’re lucky you have a wife that bakes.” LMAO
The week before…*thinks* … um, I believe it was chocolate chip cookies. Our favorite chocolate chip cookie recipe is from Hillbillyhousewife.com, and I use it religiously, though I do throw in more chips than she suggests, since we love chocolate.
I’m not sure what I’m going to make this week. Thinking of trying out something new…we’ll see.
This afternoon, I made bread. Yes, real bread. I’ve been waiting to try out the “no knead” recipe over at steamy kitchen ever since I was pointed towards it a couple weeks ago.
Everything was working out great until after I added the yeast….to realize that her recipe said “instant yeast” and all I had was regular yeast. Makes a difference, beleive me! So, I tossed in a couple tablespoons of sugar to feed the little beasts and mixed it with a little extra flour to give it a drier consistancy so I could do a little kneading, just to get the yeast to distribute and mingle with the sugar. Followed the rest of the recipe, even cooking it in my new cast iron dutch oven. It’s now sitting out on my counter, cooling. And I’m dying to dig in! Excuse me while I get some warm bread and butter….

That bread sounds darn good! I’ll have to try it one weekend.
